Why this works

A fibre-rich, plant-protein side dish that is filling and relatively low in saturated fat, but the barbecue sauce, ketchup and jalapeños in brine push the sodium and sugar up a little.

High in fibre. Black beans provide a substantial amount of fibre, supporting digestive health and helping with fullness and steadier blood sugar responses.

Plant protein and minerals. Beans contribute useful protein plus minerals such as iron, magnesium and potassium, which support energy metabolism and muscle function.

Sodium from condiments. Barbecue sauce, ketchup and jarred jalapeños can add a meaningful sodium load, so this dish may not suit a low-salt diet unless adjusted.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Mix the black beans, barbecue sauce, mustard and ketchup in an ovenproof dish.
  3. Dot the butter over the top and scatter over sliced jalapeños.
  4. Bake for 20 minutes until bubbling and slightly thickened, then serve hot.
