Why this works
Rich, indulgent breakfast with substantial energy, saturated fat and sugar; best enjoyed occasionally rather than as an everyday choice.
Berries. Fresh berries add vitamin C, polyphenols and a modest fibre boost, supporting overall fruit intake.
Eggs and milk. Eggs and milk contribute protein, vitamin B12 and iodine, though the overall dish remains fairly energy-dense.
Cream cheese and margarine. These ingredients raise saturated fat significantly, which may be less favourable for heart health if eaten often.
Method
- Beat the cream cheese until smooth, then gently fold through half of the fresh berries and 1 tbsp honey.
- Spread the filling over 4 slices of bread, then sandwich with the remaining 4 slices and press lightly to seal.
- Whisk the eggs with the milk in a shallow bowl.
- Melt a little margarine in a non-stick frying pan over medium heat.
- Dip each sandwich into the egg mixture, coating both sides without soaking for too long.
- Fry the sandwiches for 2–3 minutes per side until golden brown and the filling is warmed through.
- Serve immediately with the remaining fresh berries and a drizzle of honey.
