Why this works
Moderate-energy pancakes with a balanced mix of carbohydrate, fat and protein, but relatively low in fibre and higher in saturated fat from butter and milk.
Provides B vitamins and iron. Plain flour contributes some B vitamins and small amounts of iron, although it is not a high-fibre grain source.
Contains protein and choline. Egg and milk add high-quality protein plus nutrients such as choline, which supports normal cell function.
Saturated fat from butter. The butter and full-fat dairy can raise saturated fat intake, so portion size matters if watching heart health.
Method
- Mix the plain flour and baking powder in a bowl.
- Whisk the milk and egg together, then stir into the dry ingredients to make a smooth batter.
- Fold in the mashed nana.
- Melt a little butter in a frying pan and cook spoonfuls of batter for 2 minutes per side until golden.
- Serve warm.
