Why this works

A filling, energy-dense tray bake with a good protein contribution, but relatively high in saturated fat and salt.

Protein and iron from beef. Minced beef provides a substantial amount of protein, plus haem iron and zinc, which support muscle maintenance and normal immune function.

Vitamin C and antioxidants from peppers. Mixed peppers add vitamin C and carotenoids, helping with iron absorption and contributing antioxidant compounds.

Higher salt and saturated fat. Cheddar, butter and the added salt push up saturated fat and sodium, so this dish is best enjoyed occasionally or with lighter sides.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Cut the potatoes into bite-sized chunks and toss with melted butter, salt, and herbs.
  3. Spread the potatoes on a roasting tray and roast for 20 minutes.
  4. Add the minced beef and mixed peppers to the tray, breaking up the beef a little, and roast for another 25 minutes.
  5. Stir everything once halfway through so it cooks evenly.
  6. Scatter over the Cheddar cheese and return to the oven for 5 minutes until melted and bubbling.
  7. Serve immediately while hot and crisp.
