Why this works

Moderate-calorie bowl with a useful amount of protein and fibre, but relatively high sodium from added salt and potentially processed meat-free mince.

Potassium from potatoes. Potatoes contribute potassium, which supports normal muscle and nerve function.

Fibre and micronutrients from lettuce and potatoes. The lettuce adds a little vitamin K and folate, while the potato contributes some vitamin C and fibre.

Sodium caution. The added salt, plus any seasoning already in the meat-free mince, can make this dish fairly high in sodium.

Method

  1. Boil the potatoes in salted water for 12-15 minutes until tender, then drain and keep warm.
  2. Cook the vegetarian meat-free mince in butter with the herbs for 8-10 minutes until hot and lightly browned.
  3. Arrange the lettuce in bowls and top with the potatoes and mince.
  4. Season with a little more salt if needed and serve immediately.
