Why this works
A hearty, filling bake with good protein and vegetables, but relatively high in calories, saturated fat and salt.
Protein rich. Vegetarian mince, cheddar and soft cheese provide a useful amount of protein for satiety and muscle repair.
Micronutrient boost from veg. Peppers, spinach and lettuce add vitamin C, folate and vitamin K, supporting immune function and normal blood health.
Saturated fat and salt. Cheddar, soft cheese, butter and added salt push saturated fat and sodium fairly high, so this is best enjoyed in moderation.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6). Boil the potatoes in salted water for 15-20 minutes until tender, then drain and mash with butter and a spoonful of Greek yoghurt.
- Meanwhile, cook the vegetarian mince in a large pan with the mixed peppers for 8-10 minutes until browned and softened. Stir in a splash of vegetable stock, tomato purée, garlic, and herbs, then simmer for 5 minutes.
- Spoon the mince mixture into a baking dish and top with the mashed potatoes. Scatter over the cheddar cheese and dot with small pieces of soft cheese.
- Bake for 20-25 minutes until golden and bubbling. Serve hot with a simple lettuce and spinach salad on the side.
