Why this works

A filling, moderately high-calorie traybake with useful fibre and protein, but fairly high in saturated fat and sodium.

Fibre from veg and potatoes. Potatoes, peppers, spinach, onion and lettuce provide a good fibre contribution, supporting digestive health and satiety.

Calcium and protein from dairy. Cheddar and Greek yoghurt add protein and calcium, which support bone health.

Salt and saturated fat concern. The added salt, cheddar and butter push sodium and saturated fat up, so this is less suitable for a low-salt or heart-focused diet.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6). Cut the potatoes into wedges and roast for 20 minutes with salt and a little butter melted over them.

Cut the wedges to a fairly even thickness so they colour at the same rate, and turn them once halfway through if the cut sides look pale rather than golden. If the tray is crowded, use two trays so the potatoes roast rather than steam.

  2. Add the mixed peppers and vegetarian mince to the tray, sprinkle with herbs, and roast for another 20 minutes.

Slice the peppers into thick strips so they keep a little bite, and break the vegetarian mince up with a spoon as it heats so it browns in small, savoury bits rather than clumping. If the tray looks dry, add a small drizzle of oil rather than extra butter.

  3. Stir the spinach through the hot traybake so it wilts, then top with cheddar cheese and return to the oven for 5 minutes.

Stir the spinach in just until the leaves collapse and darken; lingering heat from the tray will do the rest, so overmixing is the main thing to avoid. When the cheddar is added, look for bubbling edges and a glossy, melted top rather than letting it dry out.

  4. Mix Greek yoghurt with a little orange juice to make a quick dressing and drizzle over the traybake before serving.

Whisk until the dressing is smooth and lightly pourable, adding the orange juice a few drops at a time so it stays creamy instead of splitting. Taste for brightness before drizzling, because the yoghurt should balance the savoury traybake without turning sharp.
