Why this works

A moderately high-calorie, cheesy skillet meal with decent fibre and some protein, but relatively high in saturated fat and sodium.

Potassium and vitamin C. Potatoes, peppers and onion contribute potassium, with peppers also adding vitamin C to support immune function and iron absorption.

Calcium and protein. Cheddar, soft cheese and Greek yoghurt add calcium and protein, though they also raise the saturated fat content.

Higher sodium. Added salt, stock and cheese make this dish fairly salty, so it may not suit those limiting sodium.

Method

  1. Dice the potatoes into small chunks and simmer in salted water for 10-12 minutes until just tender, then drain well.

Cut the potatoes into evenly sized pieces so they soften at the same rate; they should yield at the edges but still hold their shape when pierced with a knife, not collapse into mash. Drain them thoroughly and leave them to steam-dry for a minute so excess water does not make the skillet watery later.

  2. Heat a large frying pan and cook the vegetarian mince with the mixed peppers for 8-10 minutes until lightly browned and softened.

Start with a hot pan and a little oil so the mince can colour rather than steam; give it a brief stir only after it has had a chance to catch some browning on the base. The peppers should look slightly softened and glossy, with any raw crunch taken off but still some shape left.

  3. Add the potatoes, butter, herbs, and a splash of stock, then cook for 5 minutes until the potatoes start to crisp.

Keep the heat at medium-high so the potatoes fry rather than stew, and let them sit against the pan for short spells to build a crisp golden crust. Add the stock a little at a time; if it disappears instantly, the pan is too hot, and if it pools, turn the heat up slightly.

  4. Stir through soft cheese and Greek yoghurt to make a creamy sauce, then fold in the spinach until wilted. Finish with cheddar cheese and serve immediately with lettuce.

Take the pan off the heat before stirring in the soft cheese and yoghurt to prevent splitting, then return it briefly only if needed to warm through. Fold in the spinach in handfuls so it wilts evenly without clumping, and stop as soon as the leaves turn dark green; overcooking will dull the colour and make the sauce thin.
