Why this works

Moderate in energy and fairly filling, with a good mix of carbohydrates, protein and vegetables, but it is relatively high in salt and saturated fat.

Vegetable-rich filling. Mixed peppers, spinach, onion, garlic and lettuce contribute vitamin C, folate and antioxidant compounds, supporting overall micronutrient intake.

Protein and calcium sources. Vegetarian mince, cheddar, soft cheese and Greek yoghurt add protein and calcium, which support muscle maintenance and bone health.

Higher salt and saturated fat. Added salt, cheddar, soft cheese and butter increase sodium and saturated fat, so this dish is less suitable for a low-salt or heart-healthy pattern in its current form.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6). Halve the peppers and place them cut-side up in a baking dish.

Set the peppers snugly in the dish so they hold their shape, and leave the cut sides facing up to catch any juices rather than letting the filling slide out.

  2. Boil the potatoes for 12 minutes until tender, then mash roughly with butter and salt.

Start the potatoes in cold salted water so they heat evenly, and stop when a knife slips through with only slight resistance; drain them well so the mash does not turn watery.

  3. Cook the vegetarian mince for 8-10 minutes, then stir in the spinach and herbs until wilted. Fold through the potato mash and a spoonful of soft cheese.

Cook the mince until any excess moisture has evaporated and it looks lightly browned rather than grey, then stir in the spinach just until it collapses to keep the filling from becoming soggy.

  4. Spoon the filling into the peppers, top with cheddar cheese, and bake for 25-30 minutes until the peppers are tender and the tops are golden. Serve with lettuce and a spoon of Greek yoghurt.

Pack the filling in fairly firmly without pressing so hard that the peppers split, and watch for the cheddar to melt into bubbling golden patches rather than darkening too far.
