Why this works

A protein-rich, lower-carbohydrate egg dish, but with a moderate amount of saturated fat from butter.

High-quality protein. Eggs provide complete protein and key nutrients such as vitamin B12 and selenium, supporting muscle maintenance and overall cell function.

Cholesterol and fat content. The eggs and butter contribute dietary cholesterol and saturated fat, so this dish is best enjoyed in moderation if you are watching heart health.

Tomato-based sauce. Tomato sauce adds some lycopene and potassium, though the amount is modest and depends on whether the sauce is salted or sweetened.

Method

  1. Boil the eggs for 6-7 minutes for a soft centre, then cool slightly and peel.
  2. Warm the tomato sauce with the mustard and butter in a small pan until glossy.
  3. Halve the eggs and spoon the glaze over the top.
  4. Serve immediately as a snack or light meal.
