Why this works
A protein-rich, low-carbohydrate traybake, though ham and ketchup contribute a meaningful amount of sodium and the dish is low in fibre.
High-quality protein. Eggs and ham provide substantial complete protein, supporting satiety and muscle maintenance.
B vitamins and selenium. Eggs contribute vitamin B12, riboflavin and selenium, while ham adds B vitamins, all important for energy metabolism.
Salt content. Processed ham and ketchup can make this dish relatively high in sodium, which is worth noting for blood pressure awareness.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
- Arrange the ham in a small baking dish.
- Whisk the eggs with the mustard and a spoonful of ketchup, then pour over the ham.
- Drizzle a little tomato ketchup on top and bake for 12-15 minutes, until the eggs are just set.
- Rest for a few minutes before serving.
