Why this works

A filling, high-protein meal with moderate fat; nutrient-rich from broccoli and salad, though salt and saturated fat can be notable depending on the mince used.

Broccoli. Provides vitamin C, vitamin K and folate, with useful fibre for digestive health.

Mince. A strong source of protein, iron and vitamin B12, but saturated fat can be high if the mince is not lean.

Sodium watch. Added salt plus mustard can push sodium up, so this may not suit a low-sodium diet without adjustment.

Method

  1. Heat a little plain cooking oil in a large frying pan, add the mince and cook until browned, breaking it up as it cooks.
  2. Stir in the balsamic vinegar and a spoonful of mustard, then cook for 2-3 minutes until glossy and well coated.
  3. Add the broccoli florets with a splash of water and cook until just tender, stirring so the broccoli picks up the sauce.
  4. Meanwhile, toss the cucumber and green salad leaves together and add a little balsamic vinegar to taste.
  5. Serve the sticky mince with the broccoli on the side and the cucumber salad alongside.
