Why this works
Moderate in calories and carbohydrate, with good protein from eggs and a useful vegetable contribution, but sodium is quite high due to added salt.
Vitamin C. The mixed bell peppers provide vitamin C, which supports immune function and helps with iron absorption.
Vitamin A and antioxidants. The coloured peppers contribute carotenoids and other antioxidants, particularly from the darker and yellow peppers.
Sodium concern. 1 tsp of added salt across 4 servings makes this dish relatively high in sodium for a home-cooked meal.
Method
- Heat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).
- Slice the green bell pepper, purple bell pepper, yellow bell pepper, grey-green pepper and dark green pepper into thin strips.
- Warm a little plain cooking oil in an ovenproof frying pan over a medium heat and cook the peppers for 6 to 8 minutes until softened.
- Whisk the eggs with salt and black pepper, then pour over the peppers and tilt the pan so the mixture spreads evenly.
- Cook gently for 2 to 3 minutes until the edges begin to set, then transfer the pan to the oven.
- Bake for 8 to 10 minutes until the frittata is just set in the centre and lightly golden on top.
- Leave to rest for a few minutes, then cut into wedges and serve warm.
