Why this works

A moderately energy-dense, protein-containing meal with useful veg content, but relatively high in saturated fat and sodium due to the cheese, butter and added salt.

Good source of protein. Eggs, vegetarian mince, cheddar and yoghurt provide a useful amount of protein for satiety and muscle repair.

Micronutrient-rich vegetables. Spinach, peppers and onion contribute folate, vitamin C and some potassium, supporting immune and blood health.

Higher saturated fat and sodium. Cheddar, butter and the added salt increase saturated fat and sodium, which may be a concern if eaten frequently.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6). Boil the potatoes for 8-10 minutes until just tender, then drain.

Keep the water at a steady boil rather than a raging one, so the potatoes soften evenly without breaking up; they should slide off the tip of a knife but still hold their shape. Drain well and let the steam escape for a minute to prevent the frittata from turning watery.

  2. Cook the vegetarian mince and mixed peppers in an ovenproof frying pan for 8 minutes. Add the potatoes and spinach, then stir through the herbs and salt.

Cook the mince mixture over a medium-high heat and let the pan stay hot enough to sizzle, which helps the vegetables take on a little colour instead of steaming. When the spinach is added, stir just until it wilts and avoid overcrowding the pan, or the filling can become grey and damp.

  3. Beat the eggs with Greek yoghurt and pour over the pan. Cook gently for 3-4 minutes until the edges begin to set.

Lower the heat so the eggs set slowly at the edges without browning underneath too quickly. Tilt the pan slightly and look for a loose, glossy centre before moving on, as the middle should still be unset when it goes into the oven.

  4. Scatter over the cheddar cheese and transfer to the oven for 12-15 minutes until puffed and golden. Serve with lettuce.

Use the cheese as a visual guide: it should melt into the surface and turn light gold rather than dark brown. If the top colours too quickly in the oven, cover loosely with foil for the last few minutes to stop it from drying out.
