Why this works

A protein-rich, savoury frittata with moderate energy and fairly high saturated fat and sodium from bacon and cheese.

High-quality protein. Eggs, bacon, cheese and yoghurt provide a substantial amount of protein for satiety and muscle maintenance.

Calcium and vitamin B12. Cheddar and yoghurt contribute calcium, while eggs and bacon add vitamin B12 and other B vitamins.

Sodium and saturated fat. Bacon and cheddar are the main sources of salt and saturated fat, so this dish may be less suitable for those limiting either.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).

Let the oven come fully up to temperature before you start the filling so the bake begins evenly and the top colours without drying the eggs out.

  2. Cook the bacon in an ovenproof frying pan until just crisp.

Keep the heat at medium rather than high so the bacon renders its fat slowly and turns crisp at the edges instead of burning or sticking.

  3. Whisk the eggs with the yoghurt.

Whisk until the mixture looks completely uniform and slightly frothy, with no streaks of yoghurt left, so the frittata bakes with a smooth, even texture.

  4. Add the lettuce to the pan for 1 minute, then pour over the egg mixture.

Toss the lettuce just until it wilts and turns glossy, then add the egg mixture straight away so it does not collapse into a watery layer.

  5. Bake until set and golden, then cut into wedges and serve.

Look for a softly puffed centre with a pale golden top that no longer trembles when the pan is nudged; if the surface browns too quickly, loosely cover with foil for the final few minutes.
