Why this works

A protein-rich, low-carb frittata that is fairly high in saturated fat and sodium due to the bacon and cheese.

High-quality protein. Eggs, bacon and cheese provide around 29 g protein per serving, supporting satiety and muscle repair.

Vitamin C and antioxidants. Orange pepper contributes vitamin C and carotenoids, which support immune function and help counter oxidative stress.

Saturated fat and salt are notable. Bacon, butter and mature cheese make this dish relatively high in saturated fat and sodium, so it is best eaten in moderation.

Method

  1. Heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and lightly butter a small ovenproof frying pan or dish.

Make sure the oven is fully up to temperature before the pan goes in, and butter right into the corners so the frittata releases cleanly after baking.

  2. Cook the bacon in a dry pan until starting to crisp, then add the orange pepper and cook for 3-4 minutes until softened.

Keep the heat at medium rather than high so the bacon renders without catching, and stop as soon as it has some colour but is still flexible rather than brittle.

  3. Whisk the eggs in a bowl and stir through half the grated extra mature cheese, seasoning with salt and black pepper if desired.

Whisk only until the yolks and whites are combined; a little air is useful, but overbeating can make the texture puff up and then fall unevenly.

  4. Pour the egg mixture over the bacon and pepper, sprinkle with the remaining cheese, then cook on a low heat for 2 minutes.

Lift the pan gently once or twice so the egg reaches the base evenly, and keep the hob on low enough that the underside does not brown before the centre has begun to thicken.

  5. Transfer to the oven and bake for 8-10 minutes until just set and golden on top. Rest for a couple of minutes before serving.

Look for the centre to have just a slight wobble when you take it out; if the top is already darkening, it has gone too far. Resting lets the residual heat finish the set without turning the eggs rubbery.
