Why this works

A protein-rich, relatively low-carbohydrate frittata, but it is also fairly high in saturated fat and sodium due to the bacon and Parmesan.

High-quality protein. Eggs, bacon and Parmesan provide a substantial amount of complete protein to support satiety and muscle repair.

B vitamins and selenium. Eggs contribute vitamin B12, riboflavin and selenium, while mushrooms add a little B-vitamin content and antioxidants.

Higher sodium and saturated fat. Bacon and Parmesan raise the salt and saturated fat content, so this dish is best enjoyed in moderation if managing blood pressure or cholesterol.

Method

  1. Heat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5). Fry the bacon in an ovenproof frying pan until starting to crisp, then add the mushrooms and cook until softened.

Keep the bacon over a medium heat so the fat renders without scorching; you want the rashers turning bronzed and just beginning to curl, not dark and brittle. If there is a lot of fat in the pan, spoon off a little before adding the mushrooms so they fry rather than stew.

  2. Stir in the chopped spring onions and cook for 1 minute more.

Stir only until the spring onions look glossy and the pale green parts have softened slightly. If they start to brown, the heat is too high and their flavour will turn sharp.

  3. Beat the eggs in a bowl, then stir in the grated Parmesan. Season to taste and pour into the pan.

Beat the eggs just until the yolks and whites are fully combined, then stop so the frittata bakes up tender rather than foamy. Hold back on the salt until after adding the Parmesan, as the cheese and bacon already bring plenty of seasoning.

  4. Cook gently for 2-3 minutes until the edges begin to set, then transfer to the oven.

Keep the pan at a low to medium-low heat and tilt it occasionally so the mixture sets evenly from the outside in. Stop on the hob as soon as the sides look lightly opaque, because overcooking here will make the finished frittata dry.

  5. Bake for 10-12 minutes until puffed and just set in the centre. Serve warm or at room temperature.

Look for a slight wobble in the very centre when you shake the pan; that means it is set enough to finish in the oven without overbaking. If the top is browning too quickly, loosely cover it with a piece of foil for the last few minutes.
