Why this works

A protein-rich frittata with moderate calories and fat, but relatively high saturated fat and sodium from the cheese, eggs and added salt.

Vitamin A from carrots. Carrots contribute beta-carotene, which supports normal vision, immune function and healthy skin.

Protein and B vitamins. Eggs and cheese provide complete protein plus B vitamins, including B12, which support energy metabolism and muscle maintenance.

Saturated fat and salt. Cheese, margarine and added salt raise saturated fat and sodium, so this dish is best enjoyed in moderation if watching heart health.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).

Give the oven at least 10 minutes to fully come up to temperature so the frittata starts cooking immediately when it goes in. An oven that is still heating can leave the centre wet while the top colours too quickly.

  2. Peel and grate the carrots. Halve and thinly slice the red onion.

Aim for even, thin strands of carrot and onion slices of similar thickness so they soften at the same pace. If the carrot is grated too coarsely, it can stay a little crunchy in the finished frittata.

  3. Melt the margarine in an ovenproof frying pan over a medium heat. Add the onion and carrots, then cook for 6-8 minutes until softened.

Keep the heat at medium rather than high so the vegetables sweat and soften without taking on much colour. Stir occasionally and lower the heat if the margarine starts browning or the onion edges catch.

  4. In a bowl, whisk together the eggs, milk, a little salt and black pepper. Stir in half the cheese.

Whisk until the eggs look uniformly pale yellow and slightly frothy, with no visible streaks of white. Adding the cheese at this stage helps it disperse evenly instead of sinking to the bottom.

  5. Spread the vegetables evenly in the pan, then pour over the egg mixture. Cook gently for 2-3 minutes until the edges begin to set.

Tilt the pan so the egg flows into the gaps between the vegetables, then use a spatula to level the surface. The edges should look just starting to turn opaque while the centre is still loose and glossy.

  6. Sprinkle the remaining cheese over the top, then transfer the pan to the oven and bake for 8-10 minutes, until puffed and just set in the centre.

Bake on the middle shelf so the top cooks evenly without over-browning. Remove it when the centre still has the faintest wobble, as it will finish setting from the residual heat.

  7. Leave to stand for 2 minutes before slicing and serving.

Let it rest in the pan before cutting so the custard firms up and the slices hold together cleanly. Wiping the knife between slices gives neater wedges and stops the filling dragging.
