Why this works
A hearty, protein-rich frittata that is relatively high in saturated fat and sodium due to the chorizo and cheese.
High-quality protein. Eggs, chorizo and cheese provide a substantial protein contribution, supporting satiety and muscle maintenance.
Vitamin-rich vegetables. Tomatoes, red onion and garlic add vitamin C, folate and antioxidant compounds such as lycopene.
Salt and saturated fat. Chorizo and cheese are the main sources of sodium and saturated fat, so this dish is best enjoyed occasionally if you are watching heart health.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6), 180°C (Fan 160°C, 356°F, Gas Mark 4). If using an ovenproof frying pan, place it over a medium heat.
- Slice the chorizo sausages and cook for 3–4 minutes until they release their oil and start to brown.
- Add the sliced red onion and cook for 4–5 minutes until softened. Stir in the chopped garlic and cook for 30 seconds.
- Add the chopped tomatoes and cook for 2–3 minutes until they begin to break down.
- In a bowl, whisk the eggs with the milk and season lightly with salt and black pepper if using.
- Stir most of the grated cheese into the egg mixture, then pour it over the chorizo and vegetables. Cook gently for 2–3 minutes without stirring.
- Scatter the remaining cheese over the top, then transfer to the oven and bake for 10–12 minutes until just set in the centre.
- Leave to rest for 2 minutes before slicing and serving warm.
