Why this works

A protein-rich, moderately calorie-dense frittata with useful calcium and little sugar, but fairly high in saturated fat and sodium from the eggs and cheddar.

Good source of protein. Eggs, yoghurt and cheddar provide a substantial amount of protein to support satiety and muscle maintenance.

Calcium and B12. Cheddar and yoghurt contribute calcium, while eggs supply vitamin B12, both important for bone health and energy metabolism.

Watch the saturated fat and salt. Cheddar is the main source of saturated fat and sodium, so portion size matters if you are managing heart health.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).

Set the oven fully in advance so the dish goes in hot and the frittata starts rising straight away rather than sitting in a lukewarm oven. If you have a baking tray, warm that too for a steadier, more even heat underneath.

  2. Whisk the eggs with the yoghurt and tomato paste until evenly combined.

Whisk only until the mixture looks smooth and the tomato paste is no longer streaky; over-whisking can make the eggs less tender. A uniform pale orange colour shows the yoghurt has been properly dispersed.

  3. Pour the mixture into a lightly greased ovenproof dish.

Tilt the dish after greasing so the fat reaches the corners and sides, which helps prevent sticking when the custard expands. Use a shallow dish rather than a deep one so the centre cooks through before the top dries out.

  4. Bake for 12-15 minutes, until just set in the centre and lightly golden on top.

Look for a slight wobble in the middle rather than a liquid slosh, as carryover heat will finish the set after it comes out. If the top is colouring too fast, loosely cover with foil to stop it catching before the centre firms.

  5. Leave to stand for a few minutes before slicing and serving.

Resting lets the steam settle so the slices hold together and do not collapse when cut. Use a sharp knife after the brief stand, wiping the blade between slices for neat edges.
