Why this works
A simple vegetable hash that is moderate in energy, low in protein and fairly high in salt, but provides useful fibre and vitamin C from the peppers.
High in vitamin C. The three peppers provide a strong source of vitamin C, which supports immune function and helps with iron absorption.
Fibre from potatoes and peppers. Potatoes and peppers contribute fibre, supporting digestive health and helping with fullness.
Salt content is high. 1 tsp of added salt across 2 servings makes this dish high in sodium, which may not suit those watching blood pressure.
Method
- Peel and dice the potatoes into small even cubes. Dice the red pepper, yellow pepper and orange pepper into similar-sized pieces.
- Heat the olive oil in a large frying pan over a medium heat. Add the potatoes and cook for 12-15 minutes, turning regularly, until golden and almost tender.
- Add the red pepper, yellow pepper and orange pepper to the pan and cook for 8-10 minutes more until softened and lightly charred at the edges.
- Season with salt and black pepper, then toss everything together and cook for 1-2 minutes more.
- Serve hot straight from the pan.
