Why this works

Hearty and energy-dense, with moderate protein but high salt and saturated fat from chorizo and butter.

Potassium from potatoes. Potatoes provide potassium, which supports normal blood pressure and muscle function.

Saturated fat and sodium are high. Chorizo and added salt make this dish relatively high in salt and saturated fat, which may not suit frequent intake.

Onions add protective compounds. Onions contribute fibre and plant compounds such as quercetin, supporting overall cardiometabolic health.

Method

  1. Peel the potatoes and cut into 2 cm dice. Finely slice the onions and dice the chorizo.
  2. Place the potatoes in a pan, cover with water and add a little salt. Bring to the boil and simmer for 6-8 minutes until just tender, then drain well.
  3. Melt the butter in a large frying pan over a medium heat. Add the onions and cook for 5 minutes until softened.
  4. Add the chorizo and cook for 2-3 minutes until its oil starts to release.
  5. Add the potatoes, season with black pepper and a little more salt, then fry for 10-12 minutes, turning occasionally, until golden and crisp.
  6. Serve hot on its own or with a spoonful of Greek yoghurt if desired.
