Why this works

A filling, moderate-carbohydrate skillet meal with good protein and fibre, but relatively high in saturated fat and energy from cheese, butter and eggs.

Vitamin C and K from cabbage. Cabbage contributes vitamin C for immune function and vitamin K for normal blood clotting and bone health.

Protein and choline from eggs. Eggs provide high-quality protein plus choline, which supports normal brain and liver function.

Calcium but also saturated fat from cheese. Cheese adds calcium for bone health, though it also increases saturated fat and salt.

Method

  1. Shred the cabbage finely.

Aim for thin, even strands so the cabbage softens quickly and blends neatly into the hash rather than staying stringy.

  2. Melt the butter in a large frying pan over a medium heat and cook the cabbage for 10–12 minutes until softened and lightly golden.

Keep the heat at a gentle sizzle rather than a hard fry; if the cabbage starts to brown too fast, lower the heat so it turns tender before the edges colour.

  3. Stir in the cheese so it starts to melt through the cabbage.

Stir just until the cheese begins to slacken and thread through the cabbage, as overmixing can make it clump and go greasy instead of creamy.

  4. In a separate pan, fry the eggs to your liking.

For crisp edges, use a little more butter or oil in the pan and avoid moving the eggs too much once they hit the heat.

  5. Pile the cabbage onto plates and top with the fried eggs.

Let the cabbage sit for a moment after piling it up so excess steam escapes, which stops the eggs from sliding and keeps the dish from turning watery.
