Why this works

A fairly energy-dense hash with moderate protein and fibre, but relatively high in salt and saturated fat due to the bacon and added salt.

Potassium and vitamin C. Potatoes and peppers provide vitamin C, while peppers also add potassium and antioxidant carotenoids.

B vitamins and iron. Bacon contributes B vitamins, particularly B12, and some iron and zinc.

Salt concern. The added teaspoon of salt, plus bacon and sauce, likely makes this dish high in sodium.

Method

  1. Peel and dice the potatoes into small cubes.
  2. Boil the potatoes in lightly salted water for 6–8 minutes until just tender, then drain well.
  3. Meanwhile, cut the bacon into pieces and dice the red and yellow peppers.
  4. Heat a little oil in a frying pan and cook the bacon until starting to crisp.
  5. Add the potatoes and fry until golden on the edges.
  6. Stir in the peppers and cook for 4–5 minutes until softened.
  7. Add a splash of sauce and season with black pepper to taste, then serve hot.
