Why this works
A hearty, energy-dense hash that is high in protein but also high in saturated fat and sodium, largely due to the chorizo, cheese and added saltiness from hot sauce.
Rich in vitamin A. Sweet potato and tomatoes contribute beta-carotene and other carotenoids, supporting eye and immune health.
Good protein content. Eggs, chorizo and cheese provide a substantial amount of protein per serving, which may support satiety and muscle maintenance.
Higher salt and saturated fat. Chorizo, cheese and hot sauce can push sodium and saturated fat up, which is worth noting for heart health.
Method
- Peel the sweet potato and cut it into 1.5 cm dice. Finely slice the red onion, crush the garlic and chop the tomatoes.
- Heat a large frying pan over a medium heat and add the chorizo sausages. Cook for 4–5 minutes until the fat starts to render and the sausage pieces take on colour.
- Add the margarine, sweet potato and red onion to the pan. Cook, stirring regularly, for 10–12 minutes until the sweet potato is nearly tender.
- Stir in the garlic and tomatoes, then cook for 3–4 minutes until the tomatoes begin to break down and coat the hash. Season with a little salt and black pepper if using.
- Make four small wells in the hash and crack the eggs into them. Cover the pan and cook for 4–6 minutes, or until the egg whites are set and the yolks are to your liking.
- Scatter over the cheese and let it melt for 1 minute. Finish with hot sauce and serve straight from the pan.
