Why this works

A fairly light, high-protein soup with plenty of vegetables, but sodium can rise depending on the broth and added salt.

High-quality lean protein. Chicken breast provides a substantial amount of protein per serving, supporting satiety and muscle maintenance.

Vitamin C and antioxidants. The peppers, onion and tomato ingredients contribute vitamin C, carotenoids and other antioxidant compounds.

Watch sodium. Chicken broth, tomato sauce and added salt can make this soup relatively high in sodium if standard products are used.

Method

  1. Trim the chicken breast and cut it into bite-sized pieces. Season lightly with salt and pepper.
  2. Heat a little plain cooking oil in a large saucepan over medium heat, then add the onion and cook for 5 minutes until softened.
  3. Stir in the bell pepper, red pepper, yellow pepper and orange pepper, and cook for another 4 minutes until they begin to soften.
  4. Add the curry powder and flour, stirring for 1 minute to coat the vegetables.
  5. Mix in the tomato paste and tomato sauce, then pour in the chicken broth a little at a time, stirring well to avoid lumps.
  6. Add the chicken breast pieces and bring the soup to a gentle simmer. Cook for 12 to 15 minutes until the chicken is cooked through and the peppers are tender.
  7. Taste and adjust with salt and pepper if needed, then stir through the coriander just before serving.
  8. Ladle into bowls and serve hot.
