Why this works

A relatively lean, high-protein bake with moderate carbohydrates and low saturated fat; best suited to a balanced meal when served with plenty of vegetables or a wholegrain side.

High-quality lean protein. Chicken breast provides a substantial amount of complete protein, supporting muscle maintenance and satiety.

Vitamin C and antioxidants. The mixed peppers and onion contribute vitamin C and plant compounds that support immune function and overall antioxidant intake.

Sodium to watch. Chicken broth and added salt can push the sodium higher, so the dish may not suit a low-salt diet without adjustment.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and lightly grease a baking dish.
  2. Slice the chicken breast into large bite-sized pieces and season with salt and pepper.
  3. Heat a little oil in a large frying pan and cook the onion until softened.
  4. Add the chicken breast and fry until lightly browned on the outside.
  5. Stir in the curry powder and flour, cooking for 1 minute to coat the chicken and onion.
  6. Add the tomato paste, tomato sauce and chicken broth, then stir until smooth and beginning to thicken.
  7. Add the bell pepper, red pepper, yellow pepper and orange pepper, then simmer for 3–4 minutes.
  8. Tip everything into the baking dish and bake for 20–25 minutes, until the chicken is cooked through and the peppers are tender.
  9. Sprinkle with coriander before serving.
