Why this works

A simple, protein-rich, lower-carbohydrate breakfast bite with moderate fat from eggs and only a small amount of fibre.

High-quality protein. Eggs provide complete protein, supporting muscle maintenance and satiety.

Vitamin C and carotenoids. Red pepper adds vitamin C and protective plant pigments, helping to boost the nutrient density of the muffins.

Cholesterol and sodium to note. Eggs contribute dietary cholesterol, and the added salt raises sodium slightly, though the amount remains modest per serving.

Method

  1. Heat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4) and lightly grease a muffin tin.
  2. Dice the red pepper very finely.
  3. Whisk the eggs with salt and black pepper.
  4. Divide the red pepper between the muffin holes.
  5. Pour the eggs over the pepper, filling each hole about three-quarters full.
  6. Bake for 12-15 minutes until puffed and set.
  7. Cool slightly before removing from the tin.
