Why this works

A protein-rich, fairly energy-dense savoury breakfast muffin with high saturated fat and sodium from bacon and cheese.

High-quality protein. Eggs, bacon and cheese provide around 20g protein per serving, supporting satiety and muscle repair.

B vitamins and choline. Eggs are a good source of choline and B vitamins, which support brain function and energy metabolism.

Sodium and saturated fat. Bacon, cheese and added salt make this dish relatively high in sodium and saturated fat, so portions matter.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and lightly grease a muffin tin.

Use an oven thermometer if you have one, as fan ovens can run hot; the tin should be ready so the egg mixture starts setting as soon as it goes in. A light coating is enough — too much grease can make the muffins fry rather than bake at the edges.

  2. Fry the bacon until just crisp, then drain and chop into small pieces.

Keep the bacon over a medium heat so the fat renders before the meat colours too quickly. Stop once the pieces are just crisp and still a little chewy, as they will firm up again in the oven.

  3. Soften the onion in a dry pan over a low heat for a few minutes until translucent.

If the onion begins to catch or brown, lower the heat and add a teaspoon of water to keep it sweating. You want it soft and glossy rather than coloured, so it blends neatly into the egg mixture.

  4. Whisk the eggs with the milk and a little salt and black pepper.

Whisk only until the yolks and whites are fully combined and the surface looks evenly pale yellow, with no streaks of egg white left. Over-whisking can make the finished muffins a bit tough and foamy.

  5. Stir in the bacon, onion and grated cheese, then divide the mixture between the muffin holes.

Fold the fillings through gently so the cheese does not clump in one spot, then portion with a spoon for even-sized muffins. Leave a small gap at the top of each hole, as the mixture will rise in the oven.

  6. Bake for 15-18 minutes until puffed, golden and set through. Leave to cool slightly before serving.

Check at the lower end of the timing by giving the tin a gentle shake; the centres should look just set with a slight wobble, not liquid. If they brown too fast, loosely cover with foil so the tops stay golden rather than dark brown.
