Why this works

A rich, protein-forward egg muffin that is relatively low in carbohydrate but high in saturated fat and sodium due to the cheese and cream cheese.

High-quality protein. Eggs and mozzarella provide a useful protein hit for satiety and muscle maintenance.

Calcium and vitamin B12. Dairy ingredients contribute calcium, while eggs and cheese provide vitamin B12 and other B vitamins.

Higher saturated fat and sodium. Philadelphia Garlic & Herbs, mozzarella and butter push saturated fat and salt higher than a lighter egg dish.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4) and lightly butter a 6-hole muffin tin with a little of the butter.

Use the preheated oven only once it has fully reached temperature, and coat the muffin tin right into the corners so the egg mixture does not catch on the edges. Any bare spots can make the muffins stick as they set.

  2. Finely dice the orange pepper and soften it in a small frying pan with the remaining butter for 3–4 minutes until just tender.

Keep the heat at medium rather than high so the pepper softens without browning; you want it bright and slightly yielding, not caramelised or watery. If it starts to colour too quickly, move the pan off the heat for a moment.

  3. In a bowl, whisk the eggs until smooth, then stir in the Philadelphia Garlic & Herbs until well combined.

Whisk just until the eggs look uniform and no long strands of white remain, then stop so the mixture stays light rather than frothy. The cheese should be evenly loosened through the eggs without leaving thick lumps.

  4. Cut the mozzarella cheese slices into small pieces and fold them through the egg mixture along with the softened orange pepper.

Let the pepper cool briefly before folding it in, otherwise it can start to warm the eggs and make the mixture patchy. Distribute the pieces through the bowl with a few gentle turns so every muffin gets both cheese and pepper.

  5. Divide the mixture evenly between the muffin holes.

Fill each hole to about the same level, leaving a little room at the top for the egg mixture to rise without spilling over. A jug or ladle makes cleaner portions than spooning straight from the bowl.

  6. Bake for 15–18 minutes, until the egg muffins are set in the middle and lightly golden on top.

Start checking at 15 minutes: the centres should look just set with no wet sheen, and the tops should be pale gold rather than deeply coloured. If the middles still wobble like custard, give them a couple more minutes instead of overbaking the tops.

  7. Leave to cool for a few minutes before lifting out and serving warm.

Leave them in the tin long enough for the edges to firm up, or they may tear when lifted out. A gentle run around each muffin with a thin knife helps release them cleanly without breaking the base.
