Why this works
A high-protein, savoury breakfast option with moderate fat and salt, but low fibre and very low carbohydrate.
High-quality protein. Eggs and bacon provide around 21g protein per serving, supporting satiety and muscle maintenance.
Source of vitamin C and lycopene. Tomatoes contribute vitamin C and lycopene, which support immune function and antioxidant intake.
Salt and saturated fat to watch. Bacon and butter increase sodium and saturated fat, so this dish is less suitable for frequent everyday use if you are limiting either.
Method
- Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4) and butter a 4-hole muffin tin.
Let the tin heat with the oven so the butter melts into a thin coating; if any bare spots remain, the eggs are more likely to cling at the edges.
- Cook the bacon until just crisp, then chop it roughly.
Keep the heat at medium rather than high so the bacon renders without scorching, and stop while it is still a touch pliable because it will firm up as it cools.
- Divide the bacon and chopped tomatoes between the muffin holes.
Pat the tomatoes dry after chopping so they do not flood the tins, and aim for an even layer so each muffin hole bakes at the same rate.
- Whisk the eggs, pour over the fillings and bake for 15–18 minutes until set.
Fill each hole only to just below the rim so the egg can puff without spilling over, and take them out when the centres still have a slight wobble rather than waiting for them to look dry.
