Why this works

A relatively protein-rich, lower-carbohydrate dish with moderate calories, but it is also fairly high in saturated fat and sodium due to the cheddar and added salt.

Vitamin C from peppers. Sweet and red peppers provide vitamin C and carotenoids, supporting immune function and antioxidant intake.

Protein and calcium from eggs and cheddar. Eggs and mature cheddar contribute high-quality protein plus calcium for bone health.

Sodium and saturated fat concern. The cheese, salsa and added salt make this dish relatively high in sodium and saturated fat, so portion size matters.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Halve the sweet peppers lengthways and remove the seeds and membranes. Place them cut-side up in a baking dish.
  3. Finely dice the red pepper, then mix it with the hot salsa and grated mature Cheddar cheese in a bowl. Season with salt and black pepper.
  4. Spoon the salsa and Cheddar mixture into each pepper half.
  5. Make a small well in the centre of each filled pepper and crack in an egg.
  6. Bake for 18-22 minutes, until the egg whites are just set and the peppers are tender.
  7. Serve immediately while the cheese is melted and the yolk is still soft, if preferred.
