Why this works

Protein-rich and satisfying, but relatively high in salt and saturated fat due to the cheddar, salt and margarine.

High-quality protein. Eggs and cheddar provide a good amount of complete protein, supporting muscle maintenance and satiety.

Micronutrients from peppers. Red and sweet peppers add vitamin C and carotenoids, which support immune function and antioxidant intake.

Salt and saturated fat to watch. The added salt plus mature cheddar and margarine make this a higher-sodium, higher-saturated-fat option.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and lightly grease a 6-hole muffin tin with margarine.
  2. Dice the red pepper and sweet peppers finely, then scatter them evenly between the muffin holes.
  3. Whisk the eggs with salt and black pepper in a bowl until well combined.
  4. Stir in the mature cheddar cheese, then pour the egg mixture over the peppers in the tin.
  5. Bake for 15–18 minutes until the muffins are set and lightly golden on top.
  6. Leave to cool for a few minutes before loosening and serving warm.
