Why this works

Protein-rich and filling, but relatively high in saturated fat and sodium due to the ham and mature cheddar.

High-quality protein. Eggs, ham and cheese provide around 20 g protein per serving, supporting satiety and muscle maintenance.

B12, choline and selenium. Eggs are a good source of vitamin B12, choline and selenium, which support nerve function and normal metabolism.

Salt and saturated fat to watch. Mature cheddar, ham and added salt raise the sodium and saturated fat content, so this is best eaten as an occasional breakfast rather than an everyday low-salt choice.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and grease a muffin tin with margarine.
  2. Whisk the eggs with salt and black pepper.
  3. Divide the chopped ham and grated cheese between the muffin holes.
  4. Pour in the eggs until each hole is nearly full.
  5. Bake for 15-18 minutes until puffed and set.
  6. Cool for a few minutes before removing from the tin.
