Why this works

A moderate-energy side dish with some dairy protein, but relatively low in fibre and higher in refined carbohydrate from couscous and orange juice.

Vitamin C. Orange juice contributes vitamin C, which supports immune function and helps with iron absorption.

Calcium. Yoghurt adds calcium, supporting bone health, though the amount per serving is modest.

Low fibre. Couscous is a refined grain and this recipe is relatively low in fibre, so it may be less filling than wholegrain alternatives.

Method

  1. Put the couscous in a heatproof bowl.
  2. Heat the orange juice until just steaming, then pour it over the couscous and cover for 5 minutes.
  3. Fluff the couscous with a fork and stir in the butter so it melts through.
  4. Spoon into bowls and top with yoghurt if you like.
  5. Serve warm.
