Why this works

Rich, energy-dense quiche with moderate protein and high saturated fat; best enjoyed as an occasional main or brunch dish.

Protein from eggs, ham and cheese. Provides a reasonable amount of protein per serving, supporting satiety and tissue maintenance.

High saturated fat. Single cream, butter, pastry and soft cheese contribute a high saturated fat load, so this is not a heart-healthy everyday choice.

Sodium from ham and cheese. Ham adds a notable sodium burden, which may be relevant for anyone managing blood pressure or salt intake.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5). Grease a tart tin with a little of the butter, then line it with the pastry case and chill if needed.
  2. Fry the ham gently for a few minutes, just until lightly coloured, then spread it over the pastry case.
  3. Crush the garlic and whisk it with the eggs and single cream until smooth. Season well.
  4. Pour the egg and cream mixture into the pastry case over the ham.
  5. Dot the remaining butter over the top in small pieces, then bake for 30–35 minutes until set and golden. Leave to cool for 10 minutes before slicing.
