Why this works

A light, protein-containing breakfast salad that is relatively low in calories and carbohydrate, but the pickles can make the sodium content notable.

High-quality protein. Eggs provide complete protein and key nutrients such as vitamin B12 and selenium, supporting satiety and muscle maintenance.

Micronutrients from greens and lemon. Salad leaves and lemon contribute folate, vitamin K and a little vitamin C, while adding volume with very few calories.

Sodium from pickles. Pickles can add a meaningful salt load, so this dish may be less suitable for those following a low-sodium diet if extra pickles are added.

Method

  1. Boil the eggs for 7 to 8 minutes, then cool, peel and halve them.
  2. Whisk the mustard with lemon juice and a little water to make a quick dressing.
  3. Arrange the salad leaves on plates and scatter over chopped pickles.
  4. Add the eggs on top and drizzle with the dressing before serving.
