Why this works

Rich, high-fat gratin with good protein from eggs and cheese, but also high in saturated fat and energy for a small serving.

Protein and B vitamins. Eggs and cheese provide useful protein, plus B12 and riboflavin, supporting muscle maintenance and energy metabolism.

Calcium-rich. Cheese and milk contribute calcium, which supports bone health.

Low fibre vegetable base. The salad adds some micronutrients and volume, but this dish is still relatively low in fibre overall.

Method

  1. Heat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and butter a small baking dish.
  2. Wilt the salad in a pan over a low heat, then spread it in the dish.
  3. Whisk together the eggs, single cream, milk and mustard, then season if desired.
  4. Pour the mixture over the salad, scatter on the cheese and bake for 15-18 minutes until golden and set.
