Why this works
A moderately high-calorie salad with good fibre and vitamin A, but also relatively high in fat, saturated fat and sodium due to the mayonnaise, feta and added salt.
High in beta-carotene. Sweet potato provides vitamin A precursors, supporting vision, skin and immune function.
Good fibre content. Sweet potato, lettuce and red onion contribute fibre, which can support digestion and fullness.
Sodium and saturated fat are notable. Feta, mayonnaise and added salt raise sodium and saturated fat, so this is less suitable for low-salt or heart-healthy diets.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and line a tray with baking paper.
- Peel the sweet potatoes and cut into bite-sized chunks. Toss with a little olive oil, salt and black pepper, then roast for 25–30 minutes until tender and caramelised.
- Whisk together the orange juice and mayonnaise in a bowl to make a smooth dressing. Season to taste with salt and black pepper.
- Arrange the roasted sweet potato over lettuce with sliced red onion if using, then spoon over the orange-mayonnaise dressing.
- Crumble or grate the cheese over the top and finish with chopped chives if you have them. Serve warm.
