Why this works

Rich, savoury and very high in fat and salt, with a moderate protein contribution from the chorizo and cheese.

High saturated fat. Chorizo and cheese contribute a high amount of saturated fat, which may be best limited if you are watching cholesterol or heart health.

Sodium concern. Chorizo is typically very salty, so this dish is likely high in sodium and may not suit a low-salt diet.

Vitamin C from orange juice. The orange juice provides some vitamin C and a small amount of natural sugar, though it is nutritionally overshadowed by the chorizo and cheese.

Method

  1. Slice the chorizo sausages into thick rounds and fry them in a dry frying pan over a medium heat until they release their oil and turn crisp at the edges.
  2. Pour in the orange juice and let it bubble for 1-2 minutes to make a glossy orange dressing.
  3. Scatter the cheese over the warm chorizo so it softens slightly, then toss everything together briefly in the pan.
  4. Serve immediately as a simple warm salad, spooning the orange dressing over the top.
