Why this works
A very sugary, low-fat dessert with modest protein from yoghurt and little fibre; best enjoyed as an occasional treat.
High in added sugars. Coca-Cola, jam and preserved fruit contribute a substantial sugar load, which may cause a rapid rise in blood glucose.
Some protein and calcium. Yoghurt provides a small amount of protein and calcium, though this is diluted across the full trifle.
Low in fibre. This recipe contains very little fibre, so it is not especially filling and offers limited digestive benefits.
Method
- Pour the Coca-Cola into a small saucepan and simmer gently until reduced to a glossy syrupy glaze, then set aside to cool.
- If the jarred preserved fruit is in large pieces, drain it slightly and spoon a little of the syrup over the fruit so it becomes glossy and well coated.
- Warm the jam in a pan for a moment until loosened, then stir in a spoonful of the Coca-Cola glaze to make a bright fruit layer.
- In serving glasses or a trifle dish, spoon in a layer of preserved fruit, then add a layer of yoghurt.
- Repeat the layers, finishing with yoghurt on top.
- Spoon the jam-and-Coca-Cola fruit glaze over the surface and chill for at least 15 minutes before serving.
