Why this works

A moderate-energy dessert with some calcium and potassium, but relatively high in refined carbohydrate and natural sugar.

Potassium from bananas. Bananas contribute potassium, which supports normal blood pressure and muscle function.

Calcium from yoghurt. Yoghurt adds calcium and a little protein, supporting bone health.

Refined carbohydrate content. Bread is likely the main source of carbohydrate and can make this dish less suitable for blood sugar control, especially if made with white bread.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4).
  2. Tear the bread into chunks and place in a baking dish.
  3. Slice the bananas and tuck them through the bread.
  4. Mix the yoghurt with melted margarine and pour over the top.
  5. Bake for 20-25 minutes until golden and softly set.
  6. Leave to cool slightly before serving.
