Why this works

A fairly energy-dense breakfast with moderate protein and fibre, but relatively high in natural and added sugars.

Potassium and fibre from bananas. Bananas contribute potassium for normal muscle and nerve function, plus fibre to support digestive health.

Protein from eggs and milk. Eggs and milk provide useful protein for satiety and tissue maintenance, making this more filling than sweet breakfast options alone.

Sugar contribution from yoghurt and fruit. Blueberry yoghurt and bananas increase the sugar content, so this dish is less suitable for those aiming to keep breakfast sugars low.

Method

  1. Mash 1 banana in a shallow bowl until smooth, then whisk in the eggs, milk and a pinch of salt.
  2. Heat a little margarine in a frying pan over a medium heat.
  3. Dip the bread slices into the banana mixture, coating both sides, then fry for 2-3 minutes on each side until golden.
  4. Serve warm with the remaining banana sliced on top and spoonfuls of blueberry yoghurt.
