Why this works
Moderate-energy dessert with some protein from eggs and antioxidants from berries, but relatively high in refined carbohydrate and added sugar.
Berries provide antioxidants. Fresh berries contribute vitamin C, polyphenols and some fibre, supporting overall fruit intake.
Eggs add protein and B vitamins. Eggs boost protein, vitamin B12 and selenium, helping make the pudding more filling than a typical sweet dessert.
Added sugar and alcohol content. Honey and wine increase sugar load, while the wine also adds alcohol; this dessert is best enjoyed in moderation.
Method
- Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4). Lightly grease a baking dish.
- Cut the bread into chunks and place in the dish with the fresh berries.
- In a bowl, whisk the eggs with the wine and honey until well combined.
- Pour the egg mixture over the bread and berries, pressing the bread down so it soaks up the liquid.
- Leave to stand for 10 minutes, then bake for 35-40 minutes until set and golden on top.
- Rest for 5 minutes before serving warm, with the berries spooned over the top.
