Why this works

A rich, energy-dense baked pudding with substantial protein and calcium, but also high in saturated fat and sodium.

Protein and calcium. Cheddar, eggs and milk provide a good amount of protein plus calcium for bone health.

High saturated fat. The cheese and whole eggs contribute a relatively high saturated fat content, which may be less suitable for frequent consumption.

Sodium content. The added teaspoon of salt makes this dish quite high in sodium per serving.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4) and lightly grease a baking dish.
  2. Cut the bread into chunks and place them in the dish.
  3. Scatter the cheese over the bread.
  4. In a bowl, mix eggs, milk, salt and black pepper until well combined.
  5. Pour the mixture evenly over the bread and cheese, pressing down gently so the bread soaks it up.
  6. Leave for 10 minutes, then bake for 25–30 minutes until puffed and golden.
  7. Serve warm while the cheese is still melty.
