Why this works

A filling, moderate-to-high calorie meal with good protein and fibre, but fairly high in saturated fat and salt from the cheese, butter and added salt.

Protein and iron. Vegetarian mince, cheddar and Greek yoghurt contribute a solid amount of protein; the potatoes and spinach also provide iron-supporting nutrients, though plant iron is less readily absorbed.

Fibre and potassium. Potatoes, spinach, peppers and lettuce add fibre and potassium, supporting digestion and normal blood pressure regulation.

Calcium and vitamin A. Cheddar, soft cheese and yoghurt provide calcium, while spinach offers beta-carotene and folate.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6). Prick the potatoes and bake for 45-50 minutes until crisp outside and soft inside.
  2. Cook the vegetarian mince with the mixed peppers in a pan for 8-10 minutes, stirring in herbs, salt, garlic powder, and smoked paprika.
  3. Split open the baked potatoes and fluff up the insides with butter and Greek yoghurt. Fold in the spinach so it wilts gently from the heat.
  4. Spoon in the vegetarian mince mixture, top with cheddar cheese and a little soft cheese, then return to the oven for 5 minutes until melted. Serve with lettuce on the side.
