Why this works

A filling, moderately high-energy meal with decent protein and fibre, but it is relatively high in saturated fat and sodium due to the cheese, butter and added salt.

Protein from mince, egg and dairy. Provides a useful protein hit per serving, supporting satiety and muscle maintenance.

Fibre and micronutrients from vegetables. Potatoes, spinach, peppers, onion and lettuce add fibre plus folate, vitamin C and potassium.

Higher salt and saturated fat. Cheddar, butter and added salt increase saturated fat and sodium, which may be a concern if eaten regularly.

Method

  1. Boil the potatoes for 15-20 minutes until soft, then drain and mash with butter and salt.
  2. Cook the vegetarian mince with the mixed peppers for 8-10 minutes, then stir in the spinach and herbs until wilted.
  3. Mix the mince mixture through the mashed potatoes and shape into cakes. Chill for 10 minutes so they hold together better.
  4. Fry the potato cakes for 3-4 minutes on each side until golden, or bake at 200°C (Fan 180°C, 392°F, Gas Mark 6) for 15 minutes. Top with cheddar cheese and serve with Greek yoghurt and lettuce.
