Why this works

A filling, protein-containing bake with moderate fibre, but it is relatively high in fat, saturated fat and sodium due to the cheese, butter, soft cheese and added salt.

Protein and calcium. Vegetarian mince, Greek yoghurt and cheddar provide a useful amount of protein, with cheese and yoghurt also contributing calcium for bone health.

Vitamin C and antioxidants. Mixed peppers, spinach, lettuce and orange juice add vitamin C, folate and protective plant compounds.

Higher saturated fat and salt. Cheddar, butter, soft cheese and the added teaspoon of salt push saturated fat and sodium up, so this is less suitable for a low-salt or heart-healthy plan.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and lightly butter a medium ovenproof dish.
  2. Boil the potatoes in salted water for 12–15 minutes until just tender, then drain well and roughly crush them with a little butter.
  3. In a large frying pan, cook the vegetarian mince until browned, then add the mixed peppers and herbs and cook for 5 minutes more until softened.
  4. Stir in the spinach and cook for 1–2 minutes until wilted, then season with salt.
  5. Spread the mince mixture into the dish and spoon the crushed potatoes over the top.
  6. Mix the Greek yoghurt with the soft cheese, then dollop over the potatoes and scatter with Cheddar cheese.
  7. Bake for 20–25 minutes until bubbling and golden. Leave to stand for 5 minutes before serving.
  8. Serve with a crisp lettuce side salad dressed with a little orange juice if desired.
