Why this works

A rich, cheese-heavy dish that is high in protein and calcium but also high in saturated fat and sodium, so best enjoyed occasionally.

Calcium from cheddar. Mature cheddar provides a meaningful amount of calcium, supporting bone health, though it also raises saturated fat.

Tomatoes contribute vitamin C and lycopene. Tomatoes add vitamin C and the antioxidant lycopene, which are beneficial for immune and heart health.

High sodium content. The added teaspoon of salt makes this dish very high in sodium, which may not suit those watching blood pressure.

Method

  1. Heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Slice the tomatoes and brown onions, then arrange them in a small baking dish.
  3. Dot with margarine and season with salt and black pepper.
  4. Cover with the mature cheddar cheese.
  5. Bake for 12-15 minutes until bubbling and golden.
