Why this works

A hearty, energy-dense bake that is high in protein but also high in saturated fat and salt, so best enjoyed occasionally.

Protein from dairy and sausages. Cottage cheese, milk and sausages provide a substantial protein hit, which supports satiety and muscle maintenance.

Calcium-rich ingredients. Cheese, cottage cheese and milk contribute calcium for bone health, though this comes alongside saturated fat and sodium.

Vegetable contribution. Onions, carrots and celery add fibre, potassium and some vitamin C, but the overall dish remains relatively low in fibre per serving.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).

Fully preheating ensures even baking and better browning from the start.

  2. Slice the sausages and chop the onions, carrots and celery finely.

Aim for small, even pieces so the vegetables cook quickly and the sausage is distributed well.

  3. Cook the onions, carrots and celery in margarine for 8-10 minutes until softened.

Cook over medium heat and stir often so the vegetables soften without taking on too much color.

  4. Stir in the sausage pieces and transfer to a baking dish.

Just warm the sausage through before baking to avoid drying it out later.

  5. Mix the cottage cheese with milk, half the cheese, salt and black pepper, then pour over the sausage mixture.

Whisk the sauce until smooth before pouring, and season lightly since the cheese adds saltiness.

  6. Top with the remaining cheese and bake for 25-30 minutes until bubbling and golden.

Use an even cheese layer for consistent browning, and let it rest briefly after baking so it sets cleanly.
